Booze-free Whiskey Sours
• 25ml lemon juice
• 1 egg white
• 10 ml spiced sugar syrup (see below)
• ¼ tsp vanilla extract
• tea infusion (see below)
• bitters to serve (optional)
Spiced Sugar Syrup
In a saucepan, heat 2 teaspoons of ground cinnamon with 1/2 cup white sugar and 1/2 cup water. Stir until sugar has dissolved. Allow to cool.
In a heatproof bowl pour 60 ml (4 tbs) of boiling water over 1 black tea bag. Steep for 10 seconds, squeeze, then discard bag. Allow tea to cool.
